Spicy Soy Sauce Marinade with Pork and Bok Choy
Ingredients
- ¼ cup reduced-sodium soy sauce
- 2 tablespoons sugar
- 1 large clove garlic, peeled and finely grated or minced
- 1 tablespoon finely grated fresh ginger
- 1 fresh red Thai chili or cayenne chili pepper, stemmed, seeded and minced
- 1 teaspoon toasted sesame oil
- 1½ pounds pork tenderloin, trimmed of fat and cut into 1-inch-thick medallions
- 1 pound bok choy, chopped (you can substitute with cabbage if you can’t find bok choy)
Directions
- Whisk soy sauce and sugar until the sugar is completely dissolved
- Add garlic, ginger, chili, and oil
- Place pork in a Ziploc bag and add the marinade. Refrigerate for 2 hours or overnight
- Chop the bok choy
- Over medium high heat, cook the pork tenderloin on 1 side for 4-6 minutes (depending on thickness)
- Flip it over, add the bok choy around the sides of the pan. Cover with lid and cook for another 6-8 minutes
