Summer Fruit Pie
Ingredients
- 6 single-serving graham cracker pie crusts*
- 3 cups of fresh or frozen berries**
- 1 cup 2% milk (or 1%, or skim)
- 2 tbsp all purpose flour or cornstarch
- 2 tbsp sugar
- 1 tsp vanilla extract
- 6 tbsp whipped cream
Directions
- Wash and slice the berries. Set aside.
- Mix the milk with sugar, flour (or cornstarch), and vanilla and take it to boil in a small pan, stirring continuously, until slightly thickened.
- Pour milk mixture in the pie crusts; top with berries, then with whipped cream.
- Refrigerate until ready to serve.
- Serve with the whipped cream.
Notes

*Can use sugar substitute and/or sugar-free pie crust to reduce calories. **Can substitute canned peaches, grapes, kiwi, or other fruit for berries.
