Quick Bruschetta Salad for One
Ingredients
- One roma tomato, chopped
- One low-fat string cheese stick, cut into small cubes or slices
- A few fresh basil leaves, chopped
- A dash of balsamic vinegar
- Salt and pepper, to taste
Directions
1. Combine all of the above in a small bowl and eat! Chill if not serving immediately.
Makes 1 salad.
