Summer Fruit Pie

Ingredients 

  • 6 single-serving graham cracker pie crusts*
  • 3 cups of fresh or frozen berries**
  • 1 cup 2% milk (or 1%, or skim)
  • 2 tbsp all purpose flour or cornstarch
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 6 tbsp whipped cream

Directions

  1. Wash and slice the berries. Set aside.
  2. Mix the milk with sugar, flour (or cornstarch), and vanilla and take it to boil in a small pan, stirring continuously, until slightly thickened.
  3. Pour milk mixture in the pie crusts; top with berries, then with whipped cream.
  4. Refrigerate until ready to serve.
  5. Serve with the whipped cream.

Notes

*Can use sugar substitute and/or sugar-free pie crust to reduce calories. **Can substitute canned peaches, grapes, kiwi, or other fruit for berries.
