Cauliflower Couscous with Chicken


couscous recipe

  • 2 cloves of garlic

  • 1/2 cup parsley

  • 1/8 cup pitted dates

  • 1 head of cauliflower

  • 2 tbsp. of extra virgin olive oil

  • black pepper and salt to taste

  • 6 ounces of boneless skinless chicken breast

  • 1/4 cup of feta cheese

  • 1/2 tablespoon of cumin

  • 1/2 tablespoon of paprika



1. Mince garlic

2. Wash and chop parsley

3. Chop dates into small pieces

4. Trim and discard stems of cauliflower, use a food processor to finely chop into the consistency of couscous

5. heat a nonstick pan over medium high heat add 1 tablespoon of oil to the pan, add processed cauliflower, a pinch of salt, black pepper, and cook cauliflower for approximately 5-6 minutes and set aside in a bowl

6. In a separate small bowl, combine pepper, cumin, sumac, and salt to taste to for chicken seasoning

7. Trim chicken and evenly coat with prepared seasoning

8. Heat nonstick pan over medium high heat and coat pan with 1 tablespoon of oil, add chicken until cooked through, approximately 5-7 minutes on each side

9. Divide cauliflower couscous into 2 bowls, top with feta cheese, dates, parsley, and chicken
