Carrots with Rainbow Chard


  • 3 cups of water
  • 3 cups carrots, peeled and sliced
  • 2 tbsp olive oil
  • 6 cups of rainbow chard, finely chopped (or any other dark green like kale)
  • ¼ tsp salt
  • ¼ tsp black pepper or red pepper flakes
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup red wine


  1. In a medium saucepan, take the water to a boil. Add the carrots and let it cook for 5 minutes. Remove from heat, drain it and set aside.
  2. Heat a medium skillet at medium heat, add the olive oil and let it heat up for 30 seconds.
  3. Add the cooked carrots, rainbow chard, seasonings and wine. Let it cook uncovered, for 4 minutes, stirring frequently. Serve it warm.
