Caprese Salad

Ingredients Caprese Salad

2 large, fresh tomatoes, very ripe

½  lb fresh mozzarella

1 cucumber

Several slices of sweet onion (optional)

10 or 12 fresh basil leaves

3 TB olive oil (best you can find)

1-2 TB balsamic vinegar

½ TB kosher salt

Directions

1. Slice tomatoes

2. Run the tines of a fork along the cucumber, trim the ends, then slice thinly

3. Arrange tomatoes and cukes in a circle on a plate

4. Mound slices of onion, if using in the center.

5. Slice mozzarella, and place slices in between tomato and cucumber slices

6. Add basil leaves with the mozzarella, as seen in the picture

7. Drizzle oil, then vinegar over the top

*Alternatively, you can mix the oil, vinegar and salt dressing in a small bowl and wisk till blended, then drizzle over the salad.
