Spicy Soy Sauce Marinade with Pork and Bok Choy

Ingredients Spicy Soy Sauce Marinade with Pork and Bok Choy

  • ¼ cup reduced-sodium soy sauce
  • 2 tablespoons sugar
  • 1 large clove garlic, peeled and finely grated or minced
  • 1 tablespoon finely grated fresh ginger
  • 1 fresh red Thai chili or cayenne chili pepper, stemmed, seeded and minced
  • 1 teaspoon toasted sesame oil
  • 1½ pounds pork tenderloin, trimmed of fat and cut into 1-inch-thick medallions
  • 1 pound bok choy, chopped (you can substitute with cabbage if you can’t find bok choy)

Directions

  1. Whisk soy sauce and sugar until the sugar is completely dissolved
  2. Add garlic, ginger, chili, and oil
  3. Place pork in a Ziploc bag and add the marinade. Refrigerate for 2 hours or overnight
  4. Chop the bok choy
  5. Over medium high heat, cook the pork tenderloin on 1 side for 4-6 minutes (depending on thickness)
  6. Flip it over, add the bok choy around the sides of the pan. Cover with lid and cook for another 6-8 minutes
