Quick Bruschetta Salad for One

Ingredients Quick Bruschetta Salad for One

  • One roma tomato, chopped
  • One low-fat string cheese stick, cut into small cubes or slices
  • A few fresh basil leaves, chopped
  • A dash of balsamic vinegar
  • Salt and pepper, to taste

Directions

1. Combine all of the above in a small bowl and eat!  Chill if not serving immediately.

Makes 1 salad.
