Soy Vegetables and Chicken

Ingredients

  • 1 lb chicken breasts
  • ¼ cup vegetable broth
  • ¼ cup light soy sauce (usually the one with green on the label and bottle)
  • ½ cup chopped celery (or any other vegetables, fresh, frozen or canned)
  • ½ cup chopped carrots (or any other vegetables, fresh, frozen or canned)
  • ½ cup chopped onion
     

Directions

  1. Heat a medium size skillet over medium heat.
  2. Add soy sauce, vegetable broth, chicken, vegetables and onion. Cover.
  3. Cook until chicken is cooked through.
  4. Remove chicken and place on serving dish. Remove vegetables with slatted spoon. (Extra soy sauce may be left in pan or used as extra flavoring).

Suggestions

Serve with rice or pasta and salad.
