Skewered Veggies
Ingredients
- 1 zucchini
- 1 medium potato
- 1 carrot
- 1 red pepper
- 1 cup of large mushrooms or other vegetable, according to your preference
- salt, pepper, rosemary
- ¼ cup olive oil*
- 4 skewers
Directions
- Wash and cut the vegetables into large chunks. Thread the vegetables alternately on skewers. In a small bowl, mix the olive oil and seasonings and brush over the vegetables.
- Bake the skewers in a 350°F oven for approximately 20 minutes, or cook on the grill!.
