Honey Lemon Asparagus
Ingredients
- 1 avg sized bunch asparagus, chopped in 2" pieces
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp honey
- 2 tbsp each chopped walnuts & golden raisins (optional)
- salt & pepper, optional
Directions
1. Coat a large pan with olive oil, add asparagus & salt. Cook at medium high heat for 3-4 minutes, until starting to soften.
2. In a small bowl, whisk the lemon juice & honey together.
3. Pour lemon & honey over asparagus once softened, and then cook for another 1-2 minutes until asparagus is firm but tender when pierced with a fork.
4. Garnish with raisins and nuts. Serve.
