Summer Salad

Ingredients:

  • 4 cups of greens (mix lettuce with darker green leaves), torn into bite-size pieces
  • ½ cup of sun-dried tomatoes, thinly sliced
  • 1 can of mandarin oranges in light syrup (15 oz), drained
  • 8 oz of fresh mozzarella balls (conserved in water)
  • 2 tbsp olive oil (can be one seasoned with basil or garlic)

 

Directions:

  1. Combine all ingredients and mix well.
