Green Apple Appetizer

Ingredients:

  • 1 green apple
  • 1 cup of shredded carrots
  • 1 cup of low fat cottage cheese 1% fat or ricotta cheese
  • 5 leaves of butter lettuce
  • 2 tbsp lemon juice
  • 5 cherry tomatoes (to decorate)

 

Directions:

  1. Chop green apple and mix it with the lemon juice.
  2. Mix it with the carrots and the cottage cheese or ricotta cheese.
  3. Place it on top of the butter lettuce and serve.
