Tortilla Pizza

Ingredients:
  • 4 whole-wheat medium tortillas
  • 1 cup seasoned tomato sauce
  • 8 slices low-fat mozzarella cheese
  • 4 cups vegetables such as broccoli, mushrooms, or peppers, sliced
  • fresh basil leaves to taste

Directions:     

  1. Place ¼ cup tomato sauce on each tortilla, spreading thinly.
  2. Place vegetables on top of sauce.
  3. Place the cheese (2 slices per pizza) and the basil on top of the vegetables.
  4. Cook pizzas in skillet, grill or preheated 350° oven. In skillet, place each pizza one at a time on non-stick skillet, and cook on oven top, covered; if baking in oven, place in non-stick baking pan or in greased baking pan; if grilling, place on top of special non-stick aluminum foil.
  5. Cook until cheese is melted and crust appears crunchy.

Note:
Vegetables can be boiled or steamed prior to adding to pizza.

Serve with green salad.
