Sesame Noodles

6 servings/serving size: 1 cup

A favorite with the Chinese take-out crowd, this dish is easy to make at home.

Ingredients:

  • 1 Tbsp peanut butter
  • 2 Tbsp lite soy sauce
  • 1 tsp sesame oil
  • 3 garlic cloves, minced
  • >1 tsp grated ginger
  • 2 cups cooked thin spaghetti noodles
  • 1/2 cup thinly sliced red pepper
  • 1/2 cup thinly sliced carrots
  • 1/4 cup minced scallions
  • 1/4 cup bean sprouts
  • red pepper flakes

Directions:

1 . In a small saucepan, combine the peanut butter, soy sauce, sesame oil, garlic, and ginger. Bring the mixture to a boil, reduce the heat, and simmer for 3 minutes.

2. Combine the remaining ingredients and pour the hot peanut sesame dressing over the pasta vegetable mixture. Serve immediately, or chill and serve cold.
