Peppermint Mousse

Ingredients:
  • 1 small box (1 ounce) sugar-free instant white chocolate pudding
  • 2 cups nonfat milk
  • 1/2 teaspoon peppermint extract
  • 3-4 drops red food coloring
  • 2 cups nonfat whipped topping
  • 5 crushed peppermint candies (optional) regular or sugar-free

Directions:     

  1. In a medium bowl, mix pudding with milk, peppermint extract and food coloring.
  2. Stir constantly with a wire whisk for 2 minutes.
  3. Refrigerate for 5 minutes.
  4. Add whipped topping and mix well.
  5. Spoon into 5 parfait glasses and serve as is or topped with crushed peppermint candies or a candy cane.

Servings:
5 servings

Menu Suggestion:
This light, refreshing dessert is a good ending to a meal. It can be decorated for the holidays with a miniature candy cane. Sugar-free peppermint candies and candy canes are available.
