Easy Ham and Egg Casserole

Ingredients:

  • 2 cups seasoned croutons
  • 8 ounces cooked ham, cut into cubes
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 small onion, chopped
  • 6 eggs, slightly beaten
  • 2 1/2 cups 1% milk
  • 1 tsp dried mustard
  • 1-1/2 cups shredded 2% Cheddar Cheese
  • 1 can (10.75 ounce) Healthy Request Cream of Mushroom soup

 

Directions:

  1. Spray 9x13 pan with Pam or equivalent.
  2. Line bottom of pan with croutons.
  3. Cover with ham cubes, peppers and onion.
  4. Combine eggs, milk, mustard, cheese and soup.
  5. Mix well.
  6. Pour over ham and croutons.
  7. Cover and refrigerate overnight.
  8. Bake at 325 degrees for 1 1/4 hours.
  9. Let rest 5 minutes.
  10. Cut into squares.
