Ingredients:
- 1 green apple
- 1 cup of shredded carrots
- 1 cup of low fat cottage cheese 1% fat or ricotta cheese
- 5 leaves of butter lettuce
- 2 tbsp lemon juice
- 5 cherry tomatoes (to decorate)
Directions:
- Chop green apple and mix it with the lemon juice.
- Mix it with the carrots and the cottage cheese or ricotta cheese.
- Place it on top of the butter lettuce and serve.
