Apple Dessert Cups
3rd Place in the DCE Recipe Contest

Ingredients:

  • 4 apples, peeled and diced
  • 1/3 cup Splenda (sucralose) for baking
  • 1 - ½ tbsp water
  • 1 tsp lemon juice (or fruit fresh)
  • 2 tbsp water
  • 1 tbsp cornstarch
  • cooking spray
  • 15 wonton wrappers (small)
    Garnish:
  • ½ cup fat free cool whip
  • 1.5 cup strawberries to garnish

Directions: 

  1. In a medium saucepan, cook apples with Splenda, water and fruit fresh for 5 minutes.
  2. Combine 2 Tbsp water and cornstarch; add to apples and cook until thickened; set aside.
  3. Spray a muffin pan with nonstick cooking spray. Press wonton wrappers into muffin cups and fill with cooked apples. Bake at 350 degrees F for 15 minutes or until wrap is golden brown.
  4. Top with a dollop of whipped topping and sliced strawberries.
  5. Serve immediately.


Servings:
15 servings.

Other Presentation ideas:
Garnish with strawberry and cool whip.
